Where many food businesses share one kitchen

A shared kitchen is a busy, cooperative place. Caterers, bakers, meal-prep cooks and food truck crews book the same ranges, sinks and coolers, sometimes back to back, and every one of them expects to find the line clean. Vallejo Janitorial keeps that promise for the operator, with a cleaning program that follows the booking calendar rather than a generic weekly checklist.

We work for the kitchen operator. The plan names each prep station, cooler, sink and drain, with its tasks and frequency, and marks the windows between bookings when a quick reset is due.

Vallejo’s food makers

Vallejo’s caterers, bakers and food trucks work out of shared kitchens around town, and every truck returns to a commissary that has to be ready for the next shift.

Prep stations and the cooking line

Stainless tables are cleared, washed, rinsed and sanitized from the work surface down to the undershelf and legs. Mixer stands, slicers, scales and cutting-board racks are wiped to the operator’s standard, and the outsides of ranges, griddles, ovens and fryers are degreased, along with the walls and backsplashes behind them.

Grease hides in predictable places: behind equipment along the floor line, on shelf tops, inside the cabinet under the range and on caster wheels. Each one is written into the schedule, so it is cleaned before it becomes a problem.

Cold storage and dish

Cold and freezer storage is kept orderly: floors scrubbed, shelving wiped, gaskets and handles cleaned and spills removed, with every tenant’s labeled product left where it belongs.

At the dish line, crews scrub the three-compartment sink and drainboards, clean the dish machine exterior and splash walls, and lift and brush out the floor drain and grate.

Floors, drains, restrooms and lockers

Kitchen floors are scrubbed with a degreasing solution, rinsed and squeegeed to the drains, with brush work along the cove base and beneath equipment. Tile and sealed concrete each receive the right method, and heavier restoration can be scheduled through floor care.

Staff restrooms, hand sinks, lockers and break areas are cleaned and restocked with our supplies or the operator’s. Outside, grease-bin pads, trash enclosures and back entries can be washed through commercial pressure washing.

Smooth handoffs between tenants

Between bookings, a short reset sanitizes the shared surfaces, clears and wipes the sinks, spot-mops the floor and removes trash, so each incoming tenant opens to a clean line. After the final booking, the overnight clean takes care of floors, drains and cold storage.

Every reset follows a written station checklist, which gives the operator a clear answer when tenants ask. Supervisors carry out quality inspections, and every cleaner is background-checked before receiving keys or codes.

After a Saturday market downtown

Saturday can be the heaviest day in a Vallejo commissary. Food trucks and vendor crews leave early for the farmers’ market on Georgia Street and roll back in the afternoon close together, each needing a wash sink, a spot by the drains and room to unload. Operators can book a mid-afternoon pass that day, or have a day porter stay until the trucks are back, so the wash area, floors and trash point are cleared while trucks are still coming in rather than after the last one parks.

That return wave also crowds the dry storage room and the receiving door. Crews sweep and mop beneath the bottom shelves, wipe shelf edges and the outsides of tenant bins, break down cardboard and clear the door threshold, leaving every labeled product where its owner set it. The overnight clean then finishes floors and drains, and the first caterer of the new week opens to a line that is ready.

Ready for inspection, and what it costs

An inspector can arrive on any day and will review the whole kitchen. A consistent program keeps floors, drains and cold storage in the condition operators want to present, and an extra deep clean can be added ahead of a scheduled inspection or a tour for prospective tenants.

Pricing reflects the kitchen’s size, its stations, coolers and dish areas, the number of daily resets, floor type and the overnight window. A walk-through gives you a quote that follows your bookings.

A few useful answers

Common questions.

Can the kitchen be reset between two tenant bookings?

Yes. A short reset sanitizes shared surfaces, clears sinks, spot-mops floors and removes trash before the next tenant starts.

Can food truck operators' wash areas be included?

Yes. Commissary sinks, wash areas and the floor and drains around them can be added to the overnight clean.

Is the cook line cleaned between bookings?

Yes. Range and griddle exteriors, prep tables and the walls behind the line are degreased and wiped during each reset, so the next tenant starts on a clean line.

Is there an option for a deep clean before an inspection?

Yes. A deep pass ahead of the visit concentrates on floors, drains, cold storage and the cook line.

Can extra cleaning be added on busy market or event days?

Yes. An extra pass can be booked for the hours when trucks and vendors return, on Saturdays or around downtown and waterfront events.
